Last Minute Simple and Healthy Thanksgiving Dinner for Two

Thanksgiving is around the corner – and you don’t know what to make?! Maybe this is your first Thanksgiving you need to actually cook for and you’re a bit overwhelmed, and you don’t have a full house to cook for. Well, I got you! Below I collected the best, healthiest and yummiest Thanksgiving recipes to make the perfect Thanksgiving dinner for two (or one!). All the recipes are gluten free, dairy free and refined sugar free. As always, try to buy organic ingredients whenever possible.

 

Sweet Laurel Paleo Pumpkin Pie

 

Lemon Garlic Spatchcock Chicken (GF)

Instead of making turkey and having to eat leftovers for a whole week, make a chicken! And getting a spatchcock chicken from the store is your easiest path to cooking bliss. Homemade Cranberry Sauce (V, GF, DF)

Cranberry sauce is SO easy to make from scratch there is absolutely NO need to get it in a can (which is loaded with sugar, additives and is very processed). All you’ll need is fresh cranberries, maple syrup, orange juice, and water! Check out my favorite recipe from Downshiftology here.

Mashed Potatoes (GF, V)

This is the SIMPLEST mashed potatoes recipe you’ll ever make – and you don’t need milk for it. Enjoy – recipe can be found here. If you also want mashed sweet potatoes, I would steam the peeled sweet potato chunks, then mash them together with a dash of maple syrup, and butter, if you like.

Honey Glazed Carrots (GF, V)

These Honey Glazed Carrots from Downshiftology (can you tell how much I love this blog??) are pure, caramelized perfection. And they couldn’t be easier to make. Here’s the recipe for this amazing one sheet side dish.

Stuffing (GF)

Honestly – when it comes to stuffing, I don’t have the space to make it from scratch, especially not gluten free. So, this is the only side dish that I get in a package – being totally honest here! This year I’m making the Aleias Savory Stuffing Mix (Gluten Free and Dairy Free), which you can get at Whole Foods or on Amazon here (affiliate link).

Sweet Laurel’s Pumpkin Pie (GF, DF)

Ok – this pie is gluten free, grain free, refined sugar free, dairy free… and it tastes like HEAVEN. The ingredient list is quite small, and the ingredients themselves are simple and wholesome. Plus it won’t spike your blood sugar! It’s Mandy Moore’s favorite too – check it out here.
